Batch 12 - Strong Cider

I'm going to see how strong I can make a cider. I started out with 3 gallons apple juice, and added 2.5 pounds of honey (boiled to kill bacteria). That brought me up to a potential alcohol content of about 15%. I'll either buy more honey or add some apple juice from concentrate. I started with my american ale yeast, but will upgrade to champagne yeast once the bubbling slows down.

(7/10/05) I added champagne yeast and let it finish bubbling, then transfered to a secondary container and let it sit. I've found that the stronger ciders need time to sit to mellow out a bit, so I've let it sit.
